Beetroot and orange purée
Ingredients for 4 people
2 medium beets
1 orange
1 clove garlic
Extra virgin olive oil
2 each. sesame
1 s. apple cider vinegar or white wine
iodized salt (optional)
Black pepper
Elaboration
- In a saucepan with water and vinegar, add the peeled beets and the garlic clove and cook until soft. Next, go through a potato mill.
- Put the resulting puree in another saucepan with a tablespoon of olive oil, the previously squeezed orange juice and stir with a spatula until smooth and achieve the desired texture.
- Season to taste.
- Serve with the toasted sesame seeds and a little orange peel on top.
